3 Perfect One-Pot Pastas ūüćĚ

There is nothing worse than finishing a nice family dinner with a sink filled with dishes calling your name. One pot pastas are a great solution to a delicious, homecooked family meal without the mess. I have provided three of my favourite simple, one pot pastas that will be sure to satisfy the whole family.  Enjoy!

Creamy Mushroom Pesto Pasta 

Ingredients: 

  • 12 oz linguine pasta
  • 10 oz cremini mushrooms, sliced¬†
  • 6 cloves garlic, thinly sliced¬†
  • ¬ľ cup pesto¬†
  • 8 oz mascarpone cheese¬†
  • 2 Tbsp olive oil¬†
  • 2 tsp salt¬†
  • ¬Ĺ tsp pepper¬†
  • 4 ¬Ĺ cups water¬†
  • Fresh basil for garnish (optional)¬†
  1. In a large pot combine the linguine, cremini mushrooms, garlic, pesto, mascarpone cheese, olive oil and water. 
  2. Bring to a boil over high heat, turning the pasta with tongs to prevent sticking, until the pasta is al dente and almost all the liquid has evaporated, about 8-10 minutes. 
  3. Top with basil. 

 

Puttanesca Pasta 

Ingredients: 

  • 12 oz linguine¬†
  • 12 oz cherry tomatoes, halved¬†
  • ¬Ĺ cup olives, pitted and halved¬†
  • ¬ľ cup capers¬†
  • ¬Ĺ cup fresh parsley, chopped¬†
  • 2 Tbsp olive oil¬†
  • 1 tsp salt¬†
  • ¬Ĺ tsp pepper¬†
  • 4 ¬Ĺ cups water
  1. In a large pot combine the linguine, cherry tomatoes, olives, capers, parsley, olive oil, salt, pepper and water. 
  2. Bring to a boil over high heat, turning the pasta with tongs to prevent sticking, until the pasta is al dente and almost all the liquid has evaporated, about 8-10 minutes. 
  3. Top with additional parsley. 

 

Cheesy Chicken and Broccoli Pasta 

Ingredients: 

  • 2¬†Tbsp olive oil¬†
  • 2 chicken breasts, cut into¬†1 inch¬†pieces¬†
  • ¬Ĺ cup onion, diced¬†
  • 2 cloves¬†garlic, minced¬†
  • 2 cups chicken broth¬†
  • 3 cups water¬†
  • 16 oz pasta shells¬†
  • 4 cups broccoli, chopped¬†
  • ¬Ĺ tsp cayenne powder¬†
  • ¬ľ tsp nutmeg¬†
  • 1 cup milk¬†
  • 2 cups cheddar cheese, shredded¬†
  1. In a large pot heat the olive oil.  Add the chicken and allow to brown on one side.  Flip chicken and then add onions and garlic as the second side browns. 
  2. Add the chicken broth, water and pasta. 
  3. Stir all the ingredients and cover with a lid and bring to a boil. Once boiled uncover and stir. Bring the heat to low, stir, cover and let simmer for 20 minutes. 
  4. Uncover and add the broccoli.  Stir continuously as the broccoli steams until the rest of the liquid evaporates. 
  5. Add the milk and cheddar cheese and stir until the cheese melts and a smooth cheese sauce forms. 
  6. Add the cayenne and nutmeg.
