3 salad recipes that are pasta-tively amazing!

Pasta salad is one of my favourite dishes to make in the summer and is my go-to potluck addition.  I love how customizable it is in that you can include any of your favourite vegetables and proteins.  Our chefs are preparing a delicious soba noodle salad for our summer collection (coming soon), but until then, I’ve included some of my favourite, more simple pasta salads that you can make on your own.  All recipes are vegetarian but would pair well with chicken and/or beef.

Mediterranean Pasta Salad

Ingredients:

  • 3 cups uncooked pasta
  • 2 cups cherry tomatoes, halved
  • 1 ½ cups chickpeas, drained and rinsed
  • 2 cups arugula
  • 1 cup cucumbers, diced
  • 1 cup feta cheese, crumbled
  • 1 cup basil leaves, chopped
  • ½ cup parsley, minced
  • ½ cup mint, chopped

Dressing:

  • ¼ cup olive oil
  • 3 Tbsp lemon juice
  • 1 tsp Dijon mustard
  • 3 garlic cloves, minced
  • 1 tsp Italian seasoning
  • ½ tsp salt
  1. Prepare pasta according to package directions and let cool to room temperature.
  2. To make the dressing whisk all ingredients together.
  3. In a large bowl combine the cooled pasta, tomatoes, chickpeas, arugula, cucumbers, feta cheese, basil, parsley and mint.
  4. Pour the dressing and toss to coat.
  5. Enjoy!

 

Southwestern Pasta Salad

Ingredients:

  • 1 lb. uncooked pasta
  • 1 can corn kernels, drained
  • 1 can black beans, drained and rinsed
  • 1 cup cheddar cheese, shredded
  • 1 cup cherry tomatoes, halved
  • 2 avocados, diced
  • ⅓ cup cilantro, chopped

Dressing:

  • 1 cup Greek yogurt
  • ⅓ cup olive oil
  • 1 Tbsp honey
  • 1 Tbsp apple cider vinegar
  • 2 cloves garlic, minced
  • 2 limes, juiced
  • ½ jalapeno, chopped
  • 1 ½ Tbsp taco seasoning
  1. Prepare pasta according to package directions and let cool to room temperature.
  2. To make the dressing whisk all ingredients together.
  3. In a large bowl combine the cooled pasta, corn, black beans, cheese, tomatoes, avocados and cilantro.
  4. Pour the dressing and toss to coat.
  5. Enjoy!

 

Tuscan Tortellini Salad

Ingredients:

  • 1 lb. fresh cheese tortellini
  • ½ cup baby spinach
  • ½ cup oil-packed sun-dried tomatoes, chopped
  • ½ cup black olives, sliced
  • ¼ cup parmesan cheese

Dressing:

  • ¼ cup olive oil
  • 2 Tbsp balsamic vinegar
  • ½ Tbsp honey
  • Salt and pepper to taste
  1. Prepare tortellini according to package directions and let cool to room temperature.
  2. To make the dressing whisk all ingredients together.
  3. In a large bowl combine the cooled tortellini, spinach, olives and sun-dried tomatoes.
  4. Pour the dressing and toss to coat.
  5. Enjoy!
