Apple Cider? Apple-solutelyūüćé

The holidays are quickly approaching and I’m already in full swing.  Amongst the many traditional holiday drinks such as eggnog, warm cocoa and pumpkin spice, apple cider is one of my favourites.  If you are an apple cider fan like me, you can incorporate these amazing flavours into almost any apple flavoured baked good.  I have provided a traditional homemade apple cider recipe below, and some of my favourite sweets to use it in.  Enjoy! 


Homemade Apple Cider 


  • 10 large apples, quartered¬†
  • ¬Ĺ orange, halved¬†
  • 4 cinnamon sticks¬†
  • 1 tsp cloves¬†
  • 1 tsp whole allspice¬†
  • 1 whole nutmeg¬†
  • ¬Ĺ cup brown sugar¬†
  1. In a large pot over medium heat add the apples, oranges, spices and brown sugar. Cover with water¬†by at least 2‚ÄĚ. Bring to a boil,¬†then¬†reduce¬†heat to a simmer, covered¬†for 2 hours.
  2. Remove orange halves, and then using a potato masher or wood spoon mash the apples.  
  3. Return to a simmer and let cook uncovered for 1 hour. 
  4. Strain through a fine strainer, using a wooden spoon to press all the juices out of the solids. 
  5. Serve warm.  


Apple Cider Bread 


  • 2 cups flour¬†
  • 1 tsp baking powder¬†
  • 1 tsp salt¬†
  • 1 tsp¬†baking soda¬†
  • 1 tsp ground cinnamon¬†
  • ¬Ĺ tsp ground cloves¬†
  • 6 Tbsp unsalted butter, room temperature¬†
  • ¬Ĺ cup granulated sugar¬†
  • ¬Ĺ cup packed brown sugar¬†
  • 2 large eggs, room temperature¬†
  • ¬Ĺ cup fresh apple cider, room temperature (see recipe above)¬†
  • 2 ¬ľ cups apples, peeled and chopped¬†
  • 1 Tbsp lemon juice¬†

Cinnamon Glaze 

  • ¬Ĺ cup¬†confectioners‚Äô sugar¬†
  • ¬Ĺ tsp ground cinnamon¬†
  • 2-4 tsp milk¬†


  1. Preheat oven to¬†350¬į F¬†and grease a 9x5-inch loaf pan.¬†
  2. In a medium bowl whisk together the dry ingredients. 
  3. In a large bowl, using an electric mixer or whisk cream together the butter, sugar and brown sugar. Add the eggs one at a time, beating well after each addition. Alternate adding flour mixture and apple cider, ending with flour. Mix just until combined. 
  4. In a small bowl toss the apples with lemon juice. Stir apples into the batter. 
  5. Transfer batter into prepared pan and bake for 45-50 minutes, until an inserted toothpick comes out clean. Let cool completely. 
  6. In a bowl, whisk together the confectioners’ sugar and cinnamon. Add milk 1 tsp at a time until desired consistency is reached. Use a spoon to drizzle icing over the apple cider bread. 


Apple Cider Muffins 


  • 2 cups flour¬†
  • 1 cup granulated sugar¬†
  • 1 tsp salt¬†
  • 2 tsp baking powder¬†
  • 2 tsp apple pie spice¬†
  • 2 large eggs, room temperature¬†
  • 2 Tbsp vegetable oil¬†
  • ¬Ĺ cup apple cider¬†(see recipe above)¬†
  • ¬ľ cup milk¬†


  • 4 Tbsp unsalted butter, melted¬†
  • ¬Ĺ cup granulated sugar¬†
  • 1 tsp cinnamon¬†¬†
  1. Preheat oven to 350¬į F and¬†grease¬†a muffin tray.¬†
  2. In a large bowl, whisk together the flour, sugar, salt, baking powder and apple pie spice. 
  3. In another bowl, whisk together the eggs, oil, apple cider and milk. 
  4. Pour the wet mixture into the dry mixture and stir just until the flour mixture is absorbed. 
  5. Pour the batter into each muffin cup filling¬†‚ÖĒ¬†fill.¬†
  6. Bake for 20-22 minutes, until an inserted toothpick comes out clean. Let cool completely. 
  7. Place the melted butter in a small bowl. In a separate bowl combine the sugar and cinnamon. 
  8. Dip the tops of the muffins in the melted butter and then roll in the sugar and cinnamon mixture to coat.
