Beat the heat with icy treats! 😋

As we head into the warmer summer months, what better way to cool off than with a homemade popsicle!  Whether you prefer a fruity, creamy or chocolate flavour, I’ve provided some of my favourite summery fresh recipes that will be sure to please the whole family.  These recipes use whole ingredients and are packed with nutrients, making them great for an afternoon snack or dessert.  I like to use these popsicle molds, but you can always use an ice cube tray with popsicle sticks as an alternative.  Remember these are only suggestions, and all ingredients can be swapped out or omitted to personalize the popsicles.

Citrus Creamsicles

Ingredients:

  • 1 medium banana
  • 1 cup Greek yogurt
  • ¼ cup freshly squeezed lime or lemon juice or ½ cup orange or grapefruit juice
  • 1 tsp citrus zest (from the citrus chosen above)
  • 2 Tbsp honey or maple syrup
  • ½ tsp vanilla
  1. Add all the ingredients to a blender and combine until smooth.
  2. Pour the mixture into your popsicle molds, filling them just below the top to allow space for the mixture to expand.
  3. Insert your popsicle sticks and freeze until set, about 4 hours.
  4. Once ready to eat, run the sides of the popsicle mold under warm water to help loosen them. Remove and enjoy!

 

Green Smoothie Pops

Ingredients:

  • 1 cup milk
  • 1 cup spinach leaves
  • 1 banana
  • 2 kiwis, peeled and sliced
  • 2 Tbsp honey or maple syrup
  • 1 Tbsp ginger, grated
  1. Add the milk and spinach to a blender and blend until smooth.
  2. Blend in the banana, 1 kiwi, honey and ginger.
  3. Place a slice of kiwi into each popsicle mold.
  4. Pour the mixture into your popsicle molds, filling them just below the top to allow space for the mixture to expand.
  5. Insert your popsicle sticks and freeze until set, about 6 hours.
  6. Once ready to eat, run the sides of the popsicle mold under warm water to help loosen them. Remove and enjoy!

 

Chocolate Fudgsicles

Ingredients:

  • 2 ripe avocados, peeled and pitted
  • ½ cup milk
  • ½ cup cocoa powder
  • ½ cup maple syrup
  • 1 tsp vanilla
  • ¼ tsp salt
  1. In a blender, add the avocado, milk, cocoa powder, maple syrup and vanilla. Blend until smooth.
  2. Pour the mixture into your popsicle molds, filling them just below the top to allow space for the mixture to expand.
  3. Insert your popsicle sticks and freeze until set, about 8 hours.
  4. Once ready to eat, run the sides of the popsicle mold under warm water to help loosen them. Remove and enjoy!

 

Watermelon Pops

Ingredients:

  • 3 cups watermelon, cubed
  • 1 Tbsp mint leaves
  • 1 ½ cups coconut water
  • 2 Tbsp lime juice
  • 1 Tbsp honey or maple syrup
  1. Add all the ingredients to a blender and blend until smooth.
  2. Pour the mixture into your popsicle molds, filling them just below the top to allow space for the mixture to expand.
  3. Insert your popsicle sticks and freeze until set, about 6 hours.
  4. Once ready to eat, run the sides of the popsicle mold under warm water to help loosen them. Remove and enjoy!
