Happy (almost) Mother’s Day!  What better way to show appreciation to the women in our lives than to prepare a special meal. I have provided 3 simple breakfast recipes great for kids in the kitchen to help show their love. These recipes are pretty basic and only require minimal adult support, such as minor chopping and putting the dishes in and out of the oven. They are all customizable so the whole family can enjoy.

Blueberry French Toast Cups


  • 6 cups bread, cubed
  • 5 eggs
  • 1 cup milk
  • ¼ cup maple syrup
  • ½ cup blueberries, fresh or frozen
  1. Preheat oven to 350° F and lightly grease a muffin tin.
  2. Have an adult cut a loaf of bread into cubes and pour cubes into a large bowl.
  3. In a small bowl, whisk together the eggs, milk and maple syrup.
  4. Pour the egg mixture over the bread cubes. Add the blueberries and mix to combine.
  5. Let the egg mixture soak into the bread cubes, about 5 minutes.
  6. Evenly distribute your mixture into each muffin cup.
  7. Bake for 20 minutes, until golden brown.
  8. Serve warm and enjoy!
  9. Top with a sprinkle of powdered sugar or a drizzle of maple syrup (optional)


Sheet-Pan Pancakes


  • 2 cups all-purpose flour
  • 5 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • ½ cup granulated sugar
  • 2 cups buttermilk
  • 4 Tbsp unsalted butter, melted
  • 2 tsp vanilla extract
  • Toppings of choice (sliced fruit, chocolate chips, maple syrup, etc.)
  1. Preheat oven to 425° F and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, salt and sugar.
  3. Mix in the buttermilk, melted butter and vanilla. Let the batter rest for 5-10 minutes.
  4. Spread the batter evenly onto the baking sheet and add any toppings.
  5. Bake for 10-12 minutes, until golden brown and a toothpick inserted comes out clean.
  6. Add any additional toppings and enjoy!

Muffin Tin Omelet Bites


  • 10 large eggs
  • ¼ cup milk
  • 1/8 tsp black pepper
  • ¼ tsp salt
  • 2/3 cup vegetables of choice, diced (spinach, bell pepper, onions, mushrooms, etc.)
  • 1/3 cup cheddar cheese, grated
  1. Preheat oven to 350° F and lightly grease a muffin tin.
  2. In a large bowl, whisk together the eggs, milk, pepper and salt.
  3. Stir in the mixed vegetables and cheese.
  4. Evenly distribute your egg mixture into the prepared muffin tin (they should be filled just below the top of each muffin mold).
  5. Bake for 20-25 minutes, until set.
  6. Allow to cool slightly and enjoy!
