Let's guac and roll! 🥑

Guacamole is one of my favourite foods and today is National Guacamole Day so you can bet I’ll be celebrating!  A traditional guacamole is made by mashing avocados in a mortar and pestle and adding chopped onions, tomatoes, garlic, lemon juice and cumin.  However, there are so many delicious spins on this classic dish.

I have provided 3 of my favourite unique guacamole recipes below.  Need an extra hand?  Try our delicious DIY Guacamole and Pico de Gallo which comes with premade seasoning and a fresh guacamole mix.  Simply slice the ripe avocados, dip your tortilla chip and enjoy!  It pairs perfectly with our Fajita Fiesta Family Kit.


Pineapple Guacamole


  • 3 ripe avocados, peeled and pitted
  • 1 jalapeno, minced
  • 1 ½ cups pineapple, diced
  • ½ cup red onion, finely chopped
  • 1 Tbsp fresh lime juice
  • ½ cup fresh cilantro, finely chopped
  • ½ tsp sea salt
  • ¼ tsp cumin
  1. Mash together the avocados, jalapeno, pineapple, onion, lime juice, cilantro, salt and cumin with a fork until well mixed.
  2. Garnish with extra pineapple and chopped cilantro and enjoy!


Roasted Corn and Goat Cheese Guacamole


  • 2 corn ears or 1 can of corn
  • 1 tsp cumin
  • ½ tsp chili powder
  • 1 Tbsp olive oil
  • 4 ripe avocados, peeled and pitted
  • ¼ cup white onion, chopped
  • 1 cup tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 lime, juiced
  • 2 Tbsp cilantro
  • ¼ cup goat cheese
  • ¼ tsp salt
  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. Toss the corn with olive oil, cumin and chili powder and place on the baking sheet. Bake for 15-20 minutes, until corn is slightly browned.
  3. Mash together the avocados, onion, garlic, tomatoes and lime juice with a fork until well mixed.
  4. Add in the cilantro, goat cheese and salt.
  5. When the corn is cooled mix in to incorporate fully.
  6. Garnish with extra cilantro and goat cheese and enjoy!


Strawberry Balsamic Guacamole


  • 3 ripe avocados, peeled and pitted
  • ½ cup strawberries, chopped
  • ½ shallot, finely chopped
  • 1 Tbsp fresh lime juice
  • 2 Tbsp balsamic vinegar
  • ½ tsp chili powder
  • Salt and pepper to taste
  1. Mash together the avocados, strawberries, shallots, lime juice, balsamic vinegar, chili powder, salt and pepper.
  2. Garnish with extra strawberries and a light drizzle of balsamic vinegar and enjoy!
