Meet Emma, Our Registered Dietitian and Devoted Fan of the Salad 🥗

Hi Wholesome GO family!  My name is Emma Minden and I’m a Registered Dietitian with a Master’s of Science in Nutrition and Dietetics from New York University and a Master of Applied Nutrition from the University of Guelph. I have a a passion for good-tasting, nutritious and wholesome foods and a love for cooking. I believe that all food fits and that everything should be enjoyed in moderation.

I have worked in a variety of different food and nutrition settings, but especially enjoy working in the food industry. I have experience working in new product development and have been working with the Wholesome GO chefs to create delicious and healthy meals to be enjoyed by you and your families. I also have experience working with children, specifically counselling families about infant introduction to solid foods and dealing with picky toddlers. My experience in the food industry has provided me with a vast knowledge of the nutrition guidelines for children of all ages.

Outside of nutrition and dietetics, I enjoy spinning, spending time outdoors and experimenting in the kitchen with different recipes. I love cooking with simple and basic household ingredients. I’ve included some of my favourite homemade salad dressings below. These can be thrown on basically any variation of salad (including fresh greens, cold pasta, corn etc.). Feel free to get creative subbing out different oils (olive oil, canola oil, avocado oil, etc.) and vinegars (balsamic vinegar, apple cider vinegar, rice vinegar, etc.).  Enjoy!

 

Balsamic Vinaigrette Dressing

½ cup olive oil

¼ cup balsamic vinegar

1 tsp garlic paste or 1 clove chopped garlic

1 Tbsp dijon mustard

A touch of maple syrup if you like a sweeter dressing

 

Honey Mustard Dressing

½ cup olive oil

3 Tbsp rice vinegar

3 Tbsp dijon mustard

3 Tbsp honey

Juice of 1 lemon or 3 Tbsp lemon juice

 

Fresh Herb Vinaigrette

This one has the most vibrant beautiful green colour.  I like to use cilantro, but feel free to sub in basil or other fresh green herbs.  *Use a blender or food processor so that the herbs blend thoroughly.

½ cup olive oil

Juice of 2 limes or ¼ cup lime juice

½ cup fresh cilantro

2 Tbsp honey

1 jalapeño seeded (if you like spicy)

 

Lemon Garlic Vinaigrette

½ cup olive oil

Juice of 1 lemon or 3 Tbsp lemon juice

2 tsp garlic paste or 2 cloves chopped garlic

1Tbsp dijon mustard
