Pancakes with a side of pancakes, please! 🥞 🍂

Warm pancakes are a Sunday morning staple. The smell of the melting butter and the sound of the bubbling batter brings me right back to childhood memories. Whether you like your pancakes thick and fluffy or thin and crispy, there are so many different recipes and varieties you can make. To make them healthier, I suggest using whole grains such as oats or whole wheat flour and adding in some fruits and/or vegetables for some extra nutrients. I have provided some of my favourite recipes below for you to try!

Banana Oatmeal Pancakes

Ingredients:

  • 2 ripe bananas
  • 1 ½ cups whole wheat flour
  • ½ cup rolled oats
  • 1 ½ tsp baking powder
  • 1 tsp cinnamon
  • 3 eggs
  • 1 cup milk
  • 1 tsp vanilla extract
  • 2 Tbsp butter
  1. In a large bowl mash the bananas until smooth.
  2. Add the flour, oats, baking powder, cinnamon, eggs, milk and vanilla extract and gently stir together.
  3. Warm a non-stick pan over medium heat and melt the butter.
  4. Drop ¼ cup full of batter onto the pan and let cook until you see bubbles on the surface of the pancake, about 3 minutes.
  5. Flip and cook for an additional 2-3 minutes.
  6. Continue until you have used all the batter.

 

Sweet Spinach Pancakes

Ingredients:

  • 1 cup spinach
  • 1 cup milk
  • 1 Tbsp apple cider vinegar
  • 1 Tbsp butter
  • 1 egg
  • 1 cup whole wheat flour
  • 1 Tbsp granulated sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  1. Add the spinach, milk, apple cider vinegar and egg to a blender or food processor and blend until smooth.
  2. In a large bowl combine the flour, sugar, baking powder, baking soda and salt.
  3. Add the blended mix to the large bowl and stir until the batter is well combined.
  4. Warm a non-stick pan over medium heat and melt the butter.
  5. Drop ¼ cup full of batter onto the pan and let cook until you see bubbles on the surface of the pancake, about 3 minutes.
  6. Flip and cook for an additional 2-3 minutes.
  7. Continue until you have used all the batter.

 

Sweet Potato Pancakes

Ingredients:

  • 1 ¼ cups whole wheat flour
  • 1 tsp cinnamon
  • 1 ½ tsp baking powder
  • 1 ¼ cups milk
  • ½ cup roasted sweet potato, mashed
  • 2 eggs
  • 2 Tbsp butter
  • 1 tsp vanilla
  1. In a large bowl combine the whole wheat flour, cinnamon, baking powder, milk, mashed sweet potato, eggs and vanilla. Once mixed the batter should be pourable but thick.
  2. Warm a non-stick pan over medium heat and melt your butter.
  3. Drop ¼ cup full of batter onto the pan and let cook until you see bubbles on the surface of the pancake, about 3 minutes.
  4. Flip and cook for an additional 2-3 minutes.
  5. Continue until you have used all the batter.
